Chicken with Peanut Sauce

This is an easy BBQ recipe from my mother and it is a hit!! There seems like a lot of steps, but they are all really short and almost takes no time at all. I just made this for a few friends on Friday and they all wanted to the recipe, so I thought it would be a good one to blog about. This recipe is really easy to double as well (however, if you do double it be careful with doubling the amount of cayenne pepper for the sauce).

Prep Time: 15-20 minutes
Cook Time: 20 minutes

Ingredients:

4 boneless, skinless chicken breasts
1/4 cup soy sauce
1 Tbsp. oil
1 tsp. packed brown sugar
1/4 tsp. ground ginger
1 clove garlic, crushed

Peanut Sauce:
1 small onion, finely chopped
1 Tbsp. oil
1/3 cup peanut butter
1 Tbsp. lemon juice
1/4 tsp. ground coriander
3-4 drops red pepper sauce or 1/4 tsp. cayenne pepper (I use the cayenne pepper)

Directions:
1. Cut chicken into tenders and place in a gallon zip-lock bag. Mix the soy sauce, oil, brown sugar, ginger & garlic in a bowl. Pour the marinade over the chicken and refrigerate at least 2 hours.
2. Prepare peanut sauce by cooking and stirring onion in oil in a saucepan. Remove from heat. Stir in remaining sauce ingredients. Heat over low heat just until blended. (Sauce will separate if overcooked.)
3. Heat grill, brush chicken with remaining marinade and grill for about 6 minutes on each side or until done.
Serve with peanut sauce.

  1. Hmmmm...I wonder if my children will like this? Granted at 22 and 20, they'd better eat whatever I cook or cook their own!!! I don't do outside grilling, will it work on my George Foreman grill?

  2. It will work on your George Foreman, I use mine all the time! You can also broil the chicken in your oven (brush chicken with marinade broil 4-5" from heat for 4-5 minutes turn; brush with marinade. Broil unitl chicken is done about 4-5 minutes longer). If your children like peanut butter, they will like this recipe; I know there seems to be a lot of different ingredients that don't sound good together but it works! And I agree with you, if they don't like it they can cook for themselves : )

  3. Thanks for the great recipe. I have never tried peanut sauce, but everyone at my house likes peanut butter so I am going to give it a try this week! I'll let you know how it goes over. In my kitchen everyone has two choices--take it or leave it! We eat at 6, 12, and 6 every day. I run out of ideas because I have to make big lunches and dinners. Boo, I really appreciate the new recipes! Yahoo!

  4. I think the peanut sauce will be great, but I like that it is a sauce and the marinated chicken can be eaten without it. One of my kids can't eat peanuts, but she would still be able to enjoy the meal without the sauce. The rest of us can split her portion!
