Strawberry Salad with Lemon Poppy-Seed Dressing

I love salad that has fruit in it and it is so refreshing during the summer. This is a combonation of two recipes and it is a great salad!

Ingredients for Salad:
8 cups torn romaine (1 med size head)
4 cups torn Bibb or Boston Lettuce (I just used the romaine, but you can use whatever you like)
2 & 1/2 cups sliced fresh strawberries (16 oz container)
1 cup (4 oz) shredded Monterey Jack cheese
1/2 cup chopped walnuts, toasted (I used cashews)

Ingredients for Dressing:
2/3 cups light olive oil
1/2 cup sugar
1/3 cup frsh lemon juice (you can also used bottled)
1 1/2 Tbsp. Poppy seeds
2 tsp. finely chopped onion
1 tsp. Dijon Mustard
1/2 tsp. salt

Process 2/3 cup light olive oil, add remaining ingredients in a blender until smooth. Store in an airtight container in the refrigerator up to a 1 week; but...serve at room temperature!

  1. Boo, you could have cooked for me this evening! I'm a real fast-food person. Had the best Penne Rustica at Macaroni Grill last night. Went on the web and found the recipe. I don't even KNOW what some of the ingredients are!

    Tonight I fixed a quick spaghetti sauce. Opened up a can of sauce (on sale for $1.00) and ground round (hardly ANY grease) then added a few seasonings. Pretty pitiful, huh!

  2. This salad looks divine! Tomorrow I am off to the grocery store so I will buy the ingredients! Yum, I love poppy-seed dressing! I have a huge midterm due for my designing curriculum class so I am a bit frazzled at the moment! I'll be burning the midnight oil the next few days!

  3. My grandmother makes a similar strawberry spinach salad and dressing however hers doesn't have cheese and I can't remember if it has walnuts. Your salad recipe looks so wonderful that I will have to try it soon. I love salads that combine fruits and vegetables in interesting ways.
